Also known as Red Neck Caviar!
Did you ever find a recipe that you just love, but are surprised you even like it? My friend Cindy made this for a church event and I didn’t even want to try it. Finally, I sampled it and loved it. I begged for the recipe which she shared. It is a very healthy treat and tastes wonderful. It is great served with Tostitos Scoops Tortilla Chips or any type of crackers. I took it to work for the guys to try and they all gave it a thumbs up! I thought you might enjoy this tasty recipe.
Hillbilly Caviar
Ingredients
2 cans of black-eyed peas, drained
2 cans shoe peg corn, drained (use a bag of frozen corn since I couldn’t find the canned)
2 cans Ro-Tel tomatoes, drained
1 can black beans, drained
2 large peppers, chopped
12 small green onions, chopped
3 ripe tomatoes, chopped
1 tsp. garlic powder
1 tsp. garlic salt
1 tsp. parsley flakes
1 16 oz. bottle Zesty Italian Dressing
Mix everything in a big bowl and refrigerate at least 12 hours. (24 is better)
Serve with scoop tortilla chips or crackers.
This recipe is very flexible. You can substitute anywhere and it still turns out great!

Looks very similar to mine, I make it every holiday even though my DIL and I are the only ones who like it, it lasts several weeks in the fridge. My “sauce” is home made though.
Salad ingredients:
pinto beans, black eyed peas (both with jalapeños if you can find them),white corn, pimento, g pepper, celery, onion.
Sauce ingredients:
1 t salt
1/2 t black pepper
1 T water
3/4 cup cider vinegar
1/2 c salad oil (I use canola)
1 c sugar
Bring to a boil, cool completely, pour over other ingredients and refridge at least 24 hours.
