Hillbilly Caviar

Also known as Red Neck Caviar!

Did you ever find a recipe that you just love, but are surprised you even like it?  My friend Cindy made this for a church event and I didn’t even want to try it.   Finally,  I sampled it and loved it.   I begged for the recipe which she shared. It is a very healthy treat and tastes wonderful.  It is great served with Tostitos Scoops Tortilla Chips or any type of crackers. I took it to work for the guys to try and they all gave it a thumbs up! I thought you might enjoy this tasty recipe.

Hillbilly Caviar

Ingredients

2 cans of black-eyed peas, drained

2 cans shoe peg corn, drained (use a bag of frozen corn since I couldn’t find the canned)

2 cans Ro-Tel tomatoes, drained

1 can black beans, drained

2 large peppers, chopped

12 small green onions, chopped

3 ripe tomatoes, chopped

1 tsp. garlic powder

1 tsp. garlic salt

1 tsp. parsley flakes

1 16 oz. bottle Zesty Italian Dressing

Mix everything in a big bowl and refrigerate at least 12 hours. (24 is better)

Serve with scoop tortilla chips or crackers.

This recipe is very flexible.  You can substitute anywhere and it still turns out great!

I have no idea where they came up with the name for this healthy, delicious recipe, but I hope you enjoy it.   Let me know what you think if it in the comments below.

Southern Strawberry-Banana Pie

On a hot afternoon or evening, this refreshing Southern Strawberry-Banana Pie is a wonderful treat!   Great as a dessert or just a special snack.   This pie would be a wonderful addition for your family get-togethers, reunions, and county fair entries.

Ingredients

2 Deep Dish Pie Shells

Strawberry/Banana Jello – Large package 6 oz. or 2 Small Packages

Sugar3 Cups Water

1 Cup of Dixie Crystals Pure Cane Sugar

4 TBSP Corn Starch

5 Cups of Strawberries

2 Large Sliced Bananas

Makes 2 Pies.

Instructions

Bake Pie Crusts as directed on package.

Cap strawberries.  If small you may use whole, if large you will want to slice or quarter.

Slice bananas.

Mix Sugar, Corn Starch, and Water

Bring ingredients to a slow boil until mixture becomes clear and thick (This takes a while)

Stir frequently.

While mixture is cooking, place strawberries and bananas into pie crust.

When cooked mixture is clear, remove from heat and add jello.

Add Jello

Stir jello till glaze is clear with no lumps.

Spoon glaze filling over strawberries and bananas.

Refrigerate finished pies till ready to serve.

Add Cool Whip and garnish with strawberries or bananas.

Patriotic Punch: For Your 4th of July Party

Independence Day is a perfect opportunity to try a new summer recipe!

If you’re having a get together this Fourth of July, tell your guests not to worry about the drinks! You’ve got it covered!

Patriotic Punch

Last year, my patriotic red, white, and blue punch was a huge hit. Now I’m letting you in on my secret.

Tips to consider before you begin:

  • No matter which drinks you choose, the key is in the sugar content. The drinks with the lower sugar contents will layer on top of those with the higher ones.
  • You can serve this drink in a large drink dispenser or in individual glasses. There are advantages to both.
  • If you serve the punch in a large dispenser, it makes for a great patriotic centerpiece! This method also saves time.
  • If you pour the punch into individual glasses or mason jars, each person gets to taste all of the drink flavors. In the large container, people are only getting one flavor at a time. This method, however, will obviously take more time! Add a Twizzler straw for extra pizzazz.

  • If you choose to go the centerpiece route, I’ll give you a little tip that I learned from my first trial run: Prepare the punch exactly where you intend to serve it.

Here’s a picture of my boyfriend and me trying to transport our already-prepared patriotic punch from the kitchen to the table. Don’t do this! First of all, it was heavy. Second, when you do this, you risk mixing the colors together!

Ingredients:

Here’s what you’ll need:

  • Your red, white, and blue drinks (I used cranberry juice, blue Gatorade, and sprite)
  • A lot of ice cubes (regular ones or you can find star-shaped trays in some stores)
  • Drink garnishes or decorations (optional – Twizzlers, American flags, etc.)

How to Prepare Your Perfect Punch

And now – the moment you’ve been waiting for!

Step one:

Your punch will be poured in thirds. Whether you’re pouring into a small glass or a large dispenser, you’ll be using the same method.

First, fill the glass a third of the way with ice. Next, pour in the drink with the highest sugar content. For me, this was the cranberry juice. I poured it down the side of the glass and did not go above the ice level, just to make sure it stayed on the bottom.

Step two:

Fill the next third of the glass with more ice cubes. You will now pour in the drink with the second highest sugar content. For me, this was the blue Gatorade. Pour this directly onto an ice cube and very, very slowly.

Step three:

Finally, fill the rest of the glass with ice cubes and repeat step two with the last drink. Go ahead and add a little garnish!

American Flag Fruit Pizza

If I come across an excuse to bake, I take advantage of it. Superbowl parties, Halloween, Mother’s Day, you name it – I’ll make a themed dish. The Fourth of July is probably my favorite holiday for baking, and this American Flag Fruit Pizza is my go-to party hit.

American Flag Fruit Pizza

Ingredients:

“Dough”

  • One package/roll of sugar cookie dough
  • “Sauce”1 8 oz. package cream cheese (softened)
  • ¼ cup of powdered sugar
  • ½ of an 8 oz. container of whipped topping
  • 1 tsp. vanilla extract

“Toppings”

  • 1 package strawberries
  • 1 package blueberries
  • Bananas (less ripe for a whiter color)

“Glaze” (optional)

Some people like to use a glaze on their fruit pizzas. If you’d like to pour a glaze over this one, I suggest a mixture of lemon juice, powdered sugar, and a tiny hint of vanilla extract.

To Prepare:

  1. First, preheat your oven to 350 degrees. Next, spray a large pizza pan with non-stick cooking spray, and roll the sugar cookie dough out into a circular shape to cover most of the pizza pan.
  1. Bake for 15-20 minutes or until your dough is a golden brown color. Let cool for at least one hour.

While your dough is cooling, you’ll want to prepare the sauce and the topping.

  1. In a large mixing bowl, beat the cream cheese, powdered sugar, whipped topping, and vanilla extract until smooth.
  1. Next, cut strawberries in half and bananas into thin, chip-like slices.
  1. After the dough has cooled, evenly spread the sauce over the dough.
  1. Arrange the strawberries, bananas, and blueberries to resemble the American flag.
  1. Optional – Make the glaze and drizzle on the fruit pizza.
  2. Refrigerate the fruit pizza until ready to serve.

This recipe was a big hit for me last 4th of July. Happy baking!

Robin’s Caramel Corn

 

Everyone loves this Caramel Corn.  It is great to give as a gift or to just munch. Warning….if planning to use for a gift, box it up or it will disappear!    I have had people who dislike other Caramel Corn ask for the recipe.

I originally got this recipe from someone I worked with about 25 years ago.  I have modified the recipe a bit.  I usually  make it with the hulless popped corn that comes in the bag at the store.  It saves half the time of making this recipe.

Ingredients

8 quarts of Popped Corn – Air-popped is best or use the hulless puffed corn that comes in bags at the store.  
2 cups of brown sugar 
2 sticks of margarine 
1/2 cup Karo Syrup (white) 
1 Tsp of Salt 
1 Tsp of Vanilla 
1/2 Tsp of Baking Soda 
1 can of mixed nuts or pnuts or cashews. 
1/2 box of Cinnamon Toast Crunch Cereal

We usually double this for a large batch. You will need two roasters or pans for a double batch.   Each batch makes a lot and you need room to stir.

Instructions

Spray roaster with Pam. Pop Popcorn and separate unpopped kernals. Mix popcorn, cereal and nuts in a large container and then put in roasters or baking pan.

Combine brown sugar, margarine, karo syrup, and salt. Boil for 4 minutes while stirring. Remove from heat and add vanilla and baking soda. Stir thoroughly. Mixture with get foamy. Pour immediately over popped corn mixture. Stir and mix well.

Bake at 240 degrees uncovered for 1 – 1 1/2 hours stirring every 15 minutes. When finished pour onto a large surface and let cool then mix it up to break up clumps and store in airtight container till ready to eat.  We usually cover the table with a large plastic cloth before dumping and cooling.
